Cupcake Decorating Class

Last Thursday, I went to the fourth night of Cake decorating class at the YMCA. We were told to bring cupcakes to decorate icing with. I remember in my research in the internet that it's nice to level the top of cupcakes before icing it. It's because the icing will have a good grip to the cupcake that way. But when I got to my class, the teacher said there's no need to really level it. I was over prepared, I thought. We were taught how to create roses the second time and chose a particular flower that we all three students can do at the same time. The two students wants to do shaggy mums but I wanted to do roses. The teacher said I can do both since shaggy mums are easy to do which will just involve one particular tip and that roses will take two tips and needs more time for preparation. I made some shaggy mums first but I wasn't satisfied of the result. I asked my teacher to teach me how to do the roses since my Mums really was a disaster (they look like shaggy tip of a mop or a wig). I'm glad I had stiff icing left and I was able to make 3 roses that night. Oh well, at least the cupcakes was devoured by my kids and my husband. I need to practice the shaggy mums at home. I am just happy for now that stiff icing consistency is the icing used in making rose icing. Winks. I hope to do more roses for my birthday cake soon.
